I’m not French, so I don’t know what kind of political discourse about the naming of Labour Day might be going on in your country, but at least “Le site officiel de l’administraion française” also calls it “Fête du Travail”… Jours fériés dans la fonction publique | Service-Public.fr

Referring to an administration rather than a historical fact makes no sense. Just like the Gulf of Mexico is not the Gulf of America…

If you want to change “Fête du Travail” you should first delete the imported french public holidays, then download the french holidays ics-file local and open it in your editor (e.g. ubuntu’s kate) and change the “Fête du Travail” to what ever you want and save that ics-file.
Next step is to open your nextcloud calendar app and open the settings at the bottom of shown image:
Here you can import the local stored ics-file and feel happy with your changes
