In the script within the head section, version information is included as _oc_config.
Is there a way to hide this information?
No (at least not in a practical sense). Even if you did, it’s visible via /status.php.

Even if you could hide or even change the version number. Just by looking at the source code, a user can find out the version.
What do you want to achieve? Do you want to hide the fact that your Nextcloud is outdated? Then update it for security reasons alone. If you can’t do that, let others host your Nextcloud.
