I could not find a list of which versions of the desktop client are currently supported (thinking security issues), and which are end of life?

I don’t think that they keep different branches. So currently 3.1.3 is the current branch. There are the first release candidate versions for 3.2.0, so once there is 3.2.0 released there won’t be any fixes for the 3.1.x or earlier branches.
I didn’t find an official statement, so what I wrote above is just my impression from previous release cycle. For clarification, it’s better to ask the developers directly: Issues · nextcloud/desktop · GitHub and perhaps put the maintenance and release cycle in the repo description like for the server version.
