The issue you are facing:

I open a synced folder from win10 client with the web client and all files are unencrypted. The win10 client has a “show e2e mnemonic” button. Before that I filled the encrypted folder with the web client with some files, deleted them and made a new sync witht the win10 client to the same folder.

i now started a new sync with a folder that i created from the win10 client and still i can open all pdf files in the web client. how can that be?

This feature is still tested. There is no full documentation, so unless we are testing ourselves, it’s tricky to get help here and it’s better to get in touch with developers directly. Checkout the repository on https://github.com/nextcloud/desktop/issues and there is even a label for that feature:
