this feature has been requested for the “mail app”, see Save mail to files · Issue #675 · nextcloud/mail · GitHub.
Snappymail saves .eml to NC:
you’ll have to use an external app to convert the .eml file to PDF etc… since eml viewer app only works upto NC27.
