users are able to unshare folders shared with them. They don’t have the possiblity to gain access to this folder again nor is the user who shared the folder notified. Can I prevent users from unsharing shared folders?

Yes I agree with this opinion. It should be fine to be ablo to “delete” shared item (either file or folder) - let it “disapeared” from my “standard” filesystem, but the item should stay preserved in my “left-side” menu in te “sharing” section.
But I think this is feature request and it should be put to bug tracer.
