in the list of providers here:
It shows me, what features / apps are offered. Some of the icons have a blue background, some not. What does the background color mean?

The list also tells me the distance to the server in km. Should that matter to me? Do e.g. 300km matter for the network latency?

The distance could matter. But more importantly than the overall distance, is the legal jurisdiction where the server is physically located, and that the service provide is subject to (the company and datacenter could be in different jurisdictions and subject to some combination of both).
And just because something is close does not mean it is fast.
