I have uploaded Nextcloud to a external linux server run by a company who I pay for each year.
How do I setup Collabora Online so I am able to edit documents, any thing else I need to install?

If your installation is new, you could use this script on a Ubuntu 16.04 VPS.
It integrates the docker CODE/Collabora setup as well.
In case you have already installed, you might need to check this steps:
