The issue you are facing:
The clients on my personal computers deleted everything after external storage (SMB) went offline. Does this mean that every time my file server will go offline (update, restart, …) nextcloud is going to delete everything from my clients? Is this normal or am I doing something wrong?

Steps to replicate it:
- Add external (SMB) storage
- Mess with permissions on the samba share of your NAS effectively provoking the external storage to go offline in your nextcloud server
