I thought there was a way to exclude certain folders from having photos and videos show up. Something about creating a file, but I cannot find information on it.
Any guidance would be greatly appreciated.

I think if you create an empty file named .nomedia in the root folder of the folder you do not want to index, it will ignore and not index that folder including its sub folders.
Please try and see if that works. This may also depend on the application that indexes the files, as some apps doesn’t respect the nomedia file. But it should work for most nextcloud apps I’ve tried on so far.
