Please I would like to know if it is possible to disable some apps for my user so that when they login they won’t see or have access to the disabled apps?

You can restrict some apps to groups but that often causes unintended behavior.
There is also the AppOrder addon that allows you to hide certain apps by default, but any user can un-hide it if they want.
