Summary of the issue you are facing:
I was playing around enabling HTTPS for the local nextcloud instance. Before everything went well until I tested different combinations to turn HTTPS on.
Steps to replicate it (hint: details matter!):

So, it has nothing to to do with configuring server, apps or files.
When I use the contacts app regularly it is only synced when I’m on LAN, offline or outside I still remain my contacts and I can edit, delete or create new ones.
This also counts for calendar entries.
That is the normal way.
The bug now occured when I made the server unavailable I would treat that like beeing offline or outside.
What apps or server did an there is no log in this network is, that on all client devices the contacts and calenders were removed temporaly. This is dangerous and all but a secure cloud solution.
The expected behave would be, experimenting admin plays with server and while server is unreachable syncing is denied like beeing offline or in an other network with an unreachable server.
Before I was playing around with that all users could use calendars and contacts as described.
