Backup your server

For those who run their NextCloud instance on a VPS such as Scaleway, Digital Ocean, how do you go about backing up your data, or perhaps your whole VM in the event something goes sideways? Thanks.

Cronjobs to pop NC in and out of maintenance mode, dump the DB and rsync the data to an offsite location.

Careful with Scaleway, because, you have no raid, your disk might corrupt…
I advise to setup raid.

Which one do you want to do? Back up your data or back up the whole VM?

It sounds like @JasonBayton has answered the question about backing up data; if you want to back up the whole VM you can speak to your VPS provider about mirroring the VM, or they may already have a snapshot feature in their portal.
